2 cups Greek yogurt (plain or vanilla)

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 tablespoon lemon juice (optional, for tang)

1 cup chocolate chips (for dipping)

1 tablespoon coconut oil (for chocolate melting)

Prepare the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, granulated sugar, ground cinnamon, vanilla extract, and lemon juice (if using). Stir until the mixture is smooth and well-combined.

    Portion the Yogurt: Using a small cookie scoop or tablespoon, scoop out portions of the yogurt mixture onto a parchment-lined baking sheet. Each dollop should be about 1 inch in diameter.

      Freeze the Yogurt Bites: Place the baking sheet with dollops of yogurt in the freezer for about 4 hours, or until fully frozen.

        Prepare the Cinnamon Sugar: In a small bowl, mix together the remaining sugar and cinnamon. Set aside.

          Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals in the microwave, stirring in between until smooth and fully melted.

            Coat the Yogurt Bites: Once the yogurt bites are frozen, remove them from the freezer. Dip each bite into the melted chocolate, ensuring they are completely coated. Gently shake off any excess chocolate.

              Dust with Cinnamon Sugar: While the chocolate is still wet, roll each coated bite in the cinnamon sugar mix. Place them back on the parchment-lined baking sheet.
