Chopped Thai Chicken Salad

2 cups cooked chicken breast, chopped

3 cups mixed greens (like romaine and spinach)

1 cup red cabbage, shredded

1 cup carrots, grated

1 bell pepper (red or yellow), diced

1/2 cup cucumber, diced

1/4 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/4 cup roasted peanuts, roughly chopped

For the dressing:

3 tablespoons peanut butter

2 tablespoons soy sauce

2 tablespoons lime juice (freshly squeezed)

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 clove garlic, minced

1 teaspoon grated ginger

Pinch of red pepper flakes (optional, for heat)

Instructions
 

Prepare the Chicken: If using leftover chicken, chop it into bite-sized pieces. If cooking fresh chicken, season it with salt and pepper, grill or pan-cook until fully cooked, and chop.

    Chop the Veggies: In a large bowl, combine mixed greens, shredded red cabbage, grated carrots, diced bell pepper, cucumber, cilantro, and green onions. Toss gently to mix.

      Make the Dressing: In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, minced garlic, grated ginger, and red pepper flakes. If the dressing is too thick, you can add a tablespoon of warm water to thin it out to your desired consistency.

        Assemble the Salad: Add the chopped chicken to the bowl of veggies. Drizzle the dressing over the salad and toss everything together until well-combined and evenly coated.
