2 cups cooked chicken breast, shredded

1 cup red cabbage, finely shredded

1 cup carrots, julienned

1 cup bell peppers (mixed colors), thinly sliced

1 cup cucumber, thinly sliced

1/2 cup fresh cilantro, chopped

1/4 cup green onions, chopped

1/4 cup roasted peanuts, crushed

1/4 cup fresh mint leaves, torn

1/2 cup Thai peanut dressing (store-bought or homemade)

For Homemade Thai Peanut Dressing:

1/4 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 teaspoon lime juice

1-2 tablespoons warm water (to thin as desired)

Instructions
 

Prepare the Dressing (if making homemade):

    - In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, and lime juice.

      - Whisk until smooth, adding warm water a tablespoon at a time until desired consistency is reached. Set aside.

        Combine the Salad Ingredients:

          - In a large salad bowl, add the shredded chicken, red cabbage, carrots, bell peppers, cucumber, cilantro, and green onions.

            Add Flavor and Crunch:

              - Pour the Thai peanut dressing over the salad mixture. Toss well to ensure all ingredients are coated.

                - Add the crushed roasted peanuts and torn mint leaves. Give it another gentle toss.

                  Chill and Serve:

                    - Allow the salad to sit for about 10 minutes to let the flavors meld together.
