1 cup canned pumpkin puree

1/2 cup unsalted butter, softened

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the softened butter, brown sugar, and granulated sugar until light and fluffy. Then, add the pumpkin puree, egg, and vanilla extract, mixing until well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, ginger, nutmeg, and salt until evenly mixed.

        Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Avoid overmixing.

          Add Chocolate Chips & Nuts: Fold in the semi-sweet chocolate chips and, if using, the chopped walnuts until evenly distributed throughout the cookie dough.
