Ingredients

1 cup creamy almond butter

1/2 cup maple syrup

1/2 cup coconut flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (dairy-free if desired)

1/4 cup chopped almonds (optional, for added crunch)

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the creamy almond butter, maple syrup, and vanilla extract. Mix until smooth and thoroughly combined.

Combine Dry Ingredients: In another bowl, whisk together the coconut flour, baking soda, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients. Stir until a thick batter forms. If the mixture is too thick, you can add a splash of almond milk to loosen it up.

Fold in Chocolates and Nuts: Gently fold in the dark chocolate chips and chopped almonds if you’re using them, ensuring they are evenly distributed throughout the batter.

Spread and Bake: Pour the batter into the prepared baking dish and spread it out evenly. Bake for 20-25 minutes, or until the bars are set and a toothpick inserted in the center comes out clean.

Cool and Cut: Allow the bars to cool in the baking dish for about 10 minutes, then use the parchment paper overhang to lift them out and let them cool completely on a wire rack. Once fully cooled, cut into squares or bars.

Serve and Enjoy: These bars can be served immediately or stored in an airtight container in the fridge for up to a week. They’re delicious on their own or paired with a dollop of extra almond butter!
