4 large ripe tomatoes (preferably heirloom), sliced

8 oz fresh mozzarella ball, sliced (preferably buffalo mozzarella)

1/4 cup fresh basil leaves, torn

3 tbsp extra virgin olive oil

2 tbsp balsamic vinegar

Salt and freshly cracked black pepper, to taste

1 tsp honey (optional, for a hint of sweetness)

1/4 tsp crushed red pepper flakes (optional, for heat)
