1 lb ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup elbow macaroni

2 cups beef or vegetable broth

1 packet (1 oz) chili seasoning mix

2 cups frozen waffle fries

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 small red onion, chopped

2 cloves garlic, minced

Salt and pepper to taste

Optional toppings: sour cream, chopped green onions, sliced jalapeños, cilantro

Instructions
 

Cook the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes, breaking it apart as it cooks. Drain excess fat.

    Sauté Vegetables: Add chopped red onion and minced garlic to the skillet. Sauté for an additional 2-3 minutes until softened and fragrant.

      Add Ingredients: Stir in the kidney beans, diced tomatoes, elbow macaroni, broth, and chili seasoning mix. Season with salt and pepper to taste. Bring to a simmer.

        Cook the Macaroni: Allow the mixture to simmer for about 10-12 minutes, stirring occasionally, until the macaroni is cooked al dente and the mixture thickens slightly.

          Add Waffle Fries: Preheat the oven according to the waffle fries packaging instructions. Once the chili-mac mixture is ready, arrange the frozen waffle fries on top of it in the skillet.

            Bake: Transfer the skillet to the oven and bake according to waffle fry instructions, typically around 15-20 minutes or until the fries are golden and crispy.
