Ingredients

1 lb ground beef or turkey

1 can (15 oz) chili (with or without beans)

1 cup elbow macaroni

2 cups beef or vegetable broth

1 cup shredded sharp cheddar cheese (divided)

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

12 slider buns

1/4 cup sour cream (for garnish)

Fresh chopped cilantro or green onions (for garnish)

Instructions

Cook the Pasta: In a medium-sized pot, bring the beef or vegetable broth to a boil. Add the elbow macaroni and cook until al dente, roughly 8-10 minutes. Drain and set aside.

Prepare the Chili Base: In a large skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, breaking it into small pieces, about 5-7 minutes.

Combine Ingredients: To the cooked meat, add the chili, cooked macaroni, chili powder, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well to combine and heat through.

Make Cheddar Sauce: In a separate small saucepan, over low heat, add 1 cup of shredded cheddar cheese and a splash of milk (about 1/4 cup). Whisk until smooth and creamy. If the cheese is too thick, add more milk in small increments until desired consistency is reached. Season with a pinch of salt.

Assemble the Sliders: Preheat your oven to 350°F (175°C). Split the slider buns in half and place the bottom halves in a baking dish. Spoon an even layer of the chili mac mixture onto each bun. Drizzle with cheddar sauce, and top with the other half of the buns.

Bake the Sliders: Cover the baking dish with aluminum foil and bake for 10-15 minutes. Remove the foil and sprinkle the remaining shredded cheddar cheese over the top. Bake for an additional 5 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let it cool slightly. Top each slider with a dollop of sour cream and a sprinkle of fresh cilantro or chopped green onions. Serve warm and enjoy!
