2 large whole wheat tortillas

1 cup cooked chicken breast, shredded or sliced

1/2 cup hummus (any flavor you prefer)

1 cup mixed fresh vegetables (such as bell peppers, cucumber, carrot, and spinach)

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

Fresh herbs (e.g., parsley or cilantro) for garnish

Prepare the Chicken: If you're using leftover chicken, shred or slice it into bite-sized pieces. If you don’t have pre-cooked chicken, cook it on a skillet with a little olive oil until golden brown, season with salt and pepper, and cut as directed.

    Make the Vegetables: Wash and slice the mixed fresh vegetables. You can julienne the carrots, thinly slice the cucumber and bell peppers, and tear the spinach into smaller pieces.
