Chewy Oatmeal Raisin Cookie Squares

1 ½ cups rolled oats

1 cup all-purpose flour

¾ cup brown sugar, packed

¾ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

1 ½ cups raisins

½ cup chopped walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a 9x13 inch baking pan with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the rolled oats, flour, baking soda, salt, and ground cinnamon. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until combined.

          Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring just until incorporated. Be careful not to overmix.

            Fold in the Raisins and Nuts: Gently fold in the raisins and chopped walnuts, if using, until evenly distributed throughout the dough.

              Spread in the Pan: Pour the cookie dough into the prepared baking pan, spreading it evenly with a spatula.

                Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are slightly golden and a toothpick inserted in the center comes out clean. The center should still be a little soft.

                  Cool and Cut: Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Once cooled, cut into squares.
