2 medium zucchinis, grated (about 2 cups)

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

2 large eggs

2 green onions, finely chopped

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)

1 teaspoon garlic powder

1/2 teaspoon black pepper

Oil for frying (vegetable or olive oil)

Prepare the Zucchini: In a large bowl, mix the grated zucchini with the salt. Let it sit for about 10-15 minutes to draw out excess moisture. Afterward, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible.

    Mix Ingredients: In a separate mixing bowl, combine the flour, grated Parmesan cheese, shredded mozzarella cheese, eggs, green onions, parsley, garlic powder, and black pepper. Mix until well combined.

      Combine Zucchini: Add the drained zucchini to the cheese mixture. Stir until all ingredients are evenly incorporated.

        Heat Oil: In a large non-stick skillet, heat about 1/4 inch of oil over medium heat. You can test if the oil is ready by dropping a small spoonful of the fritter mixture into the oil; if it sizzles, it’s ready.

          Form Fritters: Scoop about 2 tablespoons of the zucchini mixture and shape it into a patty. Carefully lower it into the hot oil. Repeat until the skillet is moderately filled, leaving space between each fritter.

            Fry until Golden: Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Make sure not to overcrowd the pan; fry in batches if necessary.

              Drain Excess Oil: Once cooked, place the fritters on a plate lined with paper towels to absorb any excess oil.
