Ingredients
  

1 lb ground turkey

1/2 cup breadcrumbs (preferably seasoned)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 tsp dried oregano

1 tsp salt

1/2 tsp pepper

1/2 cup marinara sauce (plus extra for serving)

4 submarine sandwich rolls

1 cup shredded mozzarella cheese

1 tbsp olive oil

Optional toppings: sliced jalapeños, banana peppers, or fresh basil

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Meatball Mixture: In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, oregano, salt, and pepper. Mix gently until just combined, being careful not to over-mix.

      Form the Meatballs: Using your hands, scoop out about 1.5 tablespoons of the mixture and roll it into a meatball. Repeat until all the mixture is formed into meatballs, about 16-18 depending on size.

        Bake the Meatballs: Place the meatballs on the prepared baking sheet. Drizzle them lightly with olive oil. Bake in the preheated oven for 20-25 minutes or until they are cooked through and golden brown on the outside.

          Prepare the Sauce: While the meatballs are baking, heat the marinara sauce in a small saucepan over low heat until warmed through.

            Assemble the Subs: Once the meatballs are done, cut the submarine rolls lengthwise (not all the way through). Place 4-5 meatballs inside each roll and top them generously with warmed marinara sauce and shredded mozzarella cheese.

              Melt the Cheese: Place the assembled subs back on the baking sheet. Return them to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.

                Serve: Remove from the oven and optionally top with sliced jalapeños, banana peppers, or fresh basil. Serve hot with additional marinara sauce on the side for dipping.
