Cheesy Turkey and Spinach Stuffed Shells

20 jumbo pasta shells

1 pound ground turkey

3 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

½ cup Parmesan cheese, grated

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring water to a boil and add a pinch of salt. Carefully add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool.

    Prepare the Filling: In a large skillet over medium heat, add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Add minced garlic and cook for an additional minute until fragrant. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

      Mix the Filling: In a large bowl, combine the cooked turkey and spinach mixture with ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well until all ingredients are thoroughly combined.

        Stuff the Shells: Preheat your oven to 375°F (190°C). Take a generous spoonful of the turkey-spinach filling and carefully stuff each jumbo shell. Place each filled shell in a 9x13 inch baking dish, open-side up.

          Add the Sauce: Pour the marinara sauce over the stuffed shells, making sure to cover them completely. Sprinkle the remaining mozzarella cheese on top for a melty, cheesy finish.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and golden.
