Cheesy Turkey and Broccoli Rice Casserole

2 cups cooked rice (white or brown)

1 pound ground turkey

2 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup (or homemade)

1 cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried thyme

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

2 tablespoons olive oil or butter

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Turkey: In a large skillet, heat the olive oil or butter over medium heat. Add the chopped onion and garlic, and sauté until the onions are translucent, about 4-5 minutes. Increase the heat to medium-high, add the ground turkey, season with salt, pepper, thyme, and smoked paprika, and cook until browned and fully cooked, about 7-10 minutes. Drain any excess fat.

      Prepare the Broccoli: If using fresh broccoli, steam or blanch it in boiling water for about 3-4 minutes until bright green and tender-crisp. If using frozen, make sure it’s thawed and drained well.

        Combine Ingredients: In a large mixing bowl, combine the cooked turkey mixture, cooked rice, broccoli, cream of mushroom soup, and milk. Mix until all ingredients are evenly distributed. Add half of the shredded cheddar cheese to the mixture and stir until well blended.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it evenly with a spatula.

            Add Toppings: Sprinkle the remaining cheddar cheese on top. If desired, add a layer of breadcrumbs for a crunchy texture.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted, bubbly, and golden brown.
