Cheesy Peach Casserole

4 ripe peaches, peeled and sliced

1 cup cottage cheese

1 cup shredded sharp cheddar cheese

1 cup cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 cup breadcrumbs

2 tablespoons melted butter

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peaches: In a medium bowl, mix the sliced peaches with the ground cinnamon and nutmeg. Set aside to let the flavors meld together.

      Make the Cheese Mixture: In a large mixing bowl, combine the cottage cheese, shredded cheddar cheese, cream cheese, granulated sugar, eggs, and vanilla extract. Use a hand mixer or a whisk to blend until the mixture is well combined and smooth.

        Layering: In a greased 9x13 inch casserole dish, evenly distribute half of the peach mixture at the bottom. Pour half of the cheese mixture over the peaches. Repeat the layers with the remaining peaches and cheese mixture.

          Breadcrumb Topping: In a small bowl, combine the breadcrumbs and melted butter until the breadcrumbs are well coated. Sprinkle this mixture over the top of the casserole.

            Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the cheese is bubbly and the top is golden brown.

              Cool and Serve: Once baked, remove from the oven and allow to cool for about 10 minutes. Garnish with fresh mint leaves if desired. Serve warm or at room temperature.
