1 cup fresh or frozen corn kernels (thawed if frozen)

1 can (15 oz) black beans, drained and rinsed

1 cup diced Hatch green chiles (canned or fresh, roasted and peeled)

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

12 mini phyllo cups (store-bought)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). This will prepare it for toasting the dip cups later.

    Combine the Filling: In a large mixing bowl, combine the corn kernels, black beans, diced Hatch green chiles, softened cream cheese, shredded cheddar cheese, sour cream, garlic powder, onion powder, cumin, smoked paprika, and a pinch of salt and pepper.
