1 lb (450g) ground beef

12 oz (340g) elbow macaroni

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

1 cup corn kernels (fresh, frozen, or canned)

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sour cream

1/2 cup salsa

1/4 cup chopped green onions (for garnish)

Jalapeño slices (optional, for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

      Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Mix in Seasoning and Veggies: To the cooked beef, add the taco seasoning, diced tomatoes with green chilies, corn, and black beans. Stir well to combine, cooking for an additional 2-3 minutes to heat the vegetables through. Season with salt and pepper to taste.

          Combine Pasta and Beef Mixture: In a large mixing bowl, combine the cooked macaroni, beef mixture, sour cream, and half of the shredded cheddar and Monterey Jack cheeses. Toss gently until everything is well mixed.

            Assemble the Bake: Transfer the mixture into a greased 9x13 inch baking dish. Spread evenly and top with the remaining cheeses.
