Cheesy Crockpot Chili Mac with Corn

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

2 cups beef broth

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies (undrained)

1 can (8 oz) tomato sauce

1 cup corn kernels (frozen or canned)

2 cups elbow macaroni

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

2 cups shredded cheddar cheese (divided)

Fresh cilantro for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef with the diced onion until the meat is cooked through and the onion is softened, about 5-7 minutes. Add the minced garlic and sauté for another minute until fragrant. Drain excess fat if needed.

    Transfer the cooked meat mixture to the crockpot. Stir in the beef broth, kidney beans, black beans, diced tomatoes (with juice), tomato sauce, corn, elbow macaroni, chili powder, cumin, paprika, salt, and pepper.

      Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the macaroni is tender and the flavors have melded together.

        About 30 minutes before serving, stir in 1 cup of the shredded cheddar cheese. Cover and continue to cook until the cheese is melted and gooey.

          Once done cooking, taste and adjust seasonings if necessary. Serve hot, garnished with the remaining shredded cheese and fresh cilantro, if desired.
