Ingredients

4 cups fresh or frozen corn kernels

1 medium onion, diced

2 cloves garlic, minced

2 medium jalapeños, seeded and diced (adjust for heat preference)

4 cups vegetable broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

1/4 cup chopped fresh cilantro (for garnish)

Optional: tortilla chips for serving

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for about 5 minutes, until softened. Stir in the minced garlic and diced jalapeños; cook for an additional 2-3 minutes until fragrant.

Add Corn and Spices: Add the corn kernels, smoked paprika, ground cumin, and a pinch of salt and pepper to the pot. Stir for another 2-3 minutes, allowing the corn to slightly caramelize.

Pour in Broth: Carefully add the vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let simmer for 10-15 minutes, allowing the flavors to meld together.

Creamy Base: Stir in the heavy cream and bring the chowder back to a gentle simmer. Let it cook for about 5 minutes, stirring occasionally.

Add Cheese: Gradually mix in the shredded cheddar cheese until it's fully melted and the chowder is smooth and creamy. Taste and adjust seasoning with more salt and pepper if needed.

Serve: Ladle the chowder into bowls and garnish with fresh cilantro. If desired, serve with crushed tortilla chips for added crunch.
