4 large russet potatoes

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

For the Chili Topping:

1 lb ground beef or ground turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes

1 packet (1 oz) chili seasoning mix

1 cup beef or vegetable broth

1 tablespoon olive oil

For the Cheesy Topping:

2 cups shredded cheddar cheese

1 cup crumbled queso fresco or feta cheese

1 jalapeño, sliced (optional for heat)

¼ cup chopped green onions

Sour cream, for garnish

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the russet potatoes, then cut them into thick fries (1/4 inch).

        - In a large bowl, toss the cut fries with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.

          - Spread the fries in a single layer on a baking sheet lined with parchment paper.

            - Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

              Make the Chili:

                - In a large skillet, heat olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it apart with a spoon.

                  - Drain excess fat if necessary. Add the chili seasoning mix, kidney beans, black beans, diced tomatoes, and broth. Stir to combine.
