Cheesy Chili Baked Potato Bites

2 large russet potatoes

1 cup cooked chili (homemade or canned)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup green onions, sliced

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Olive oil for brushing

Optional toppings: jalapeños, diced tomatoes, or additional cheese

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash the russet potatoes thoroughly and pat them dry. Prick each potato several times with a fork to allow steam to escape.

      Roast the Potatoes: Brush the potatoes lightly with olive oil and sprinkle them with salt. Place them directly on the oven rack or on a baking sheet and roast for 45-60 minutes, or until they are tender and the skins are crispy.

        Let Cool: Once done, remove the potatoes from the oven and allow them to cool for about 15 minutes.

          Scoop and Mix: Cut the potatoes in half lengthwise. Carefully scoop out the insides, leaving a small border of potato against the skin. In a bowl, combine the scooped potato, chili, garlic powder, onion powder, salt, and pepper. Mix until well combined.

            Fill the Skins: Spoon the cheesy chili mixture back into the potato skins, heaping them generously.

              Add Cheese and Bake Again: Sprinkle the shredded cheddar cheese evenly on top of the filled potato skins. Place them back in the oven for an additional 10-15 minutes or until the cheese is melted and bubbly.

                Garnish and Serve: Remove the baked potato bites from the oven. Top with a dollop of sour cream and sliced green onions. If desired, add any optional toppings like jalapeños or extra cheese.
