Cheesy Cauliflower Nacho Tray Bake

1 large head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup pepper jack cheese, shredded

1 can (15 oz) black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 jalapeño, thinly sliced (optional)

1 avocado, diced

1/4 cup sour cream or Greek yogurt (for drizzling)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper until evenly coated.

      Bake the Cauliflower: Spread the seasoned cauliflower on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the cauliflower is tender and slightly golden, tossing halfway through for even cooking.

        Add Cheeses and Beans: Remove the cauliflower from the oven. Sprinkle the shredded cheddar and pepper jack cheeses evenly over the cauliflower. Add the black beans and cherry tomatoes on top. If using jalapeños, sprinkle them over the mixture as well.

          Return to Oven: Return the tray to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

            Top and Serve: Once out of the oven, let it cool for a couple of minutes. Drizzle sour cream over the top, and then add the diced avocado and chopped cilantro for a fresh burst of flavor.
