Cheesy Broccoli Rice Casserole

Ingredients
  

2 cups of cooked brown rice (or white rice)

3 cups of fresh broccoli florets (or frozen, thawed)

1 cup of shredded cheddar cheese

1 cup of cream of mushroom soup (store-bought or homemade)

½ cup of milk

1 tablespoon of olive oil

1 medium onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of salt

½ teaspoon of black pepper

½ teaspoon of paprika (optional)

½ teaspoon of garlic powder

½ cup of breadcrumbs (optional, for topping)

¼ cup of grated Parmesan cheese (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Prepare Broccoli: If using fresh broccoli, steam or blanch the florets until bright green and tender, about 2-3 minutes. Drain and set aside. If using frozen, ensure they are fully thawed and drained.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, broccoli florets, cream of mushroom soup, milk, shredded cheddar cheese, salt, pepper, paprika, and garlic powder. Stir until all ingredients are well incorporated.

          Transfer to Dish: Pour the mixture into a greased 9x13 inch (or similar size) baking dish, spreading it evenly.

            Add Topping: If desired, mix the breadcrumbs and grated Parmesan cheese together in a small bowl and sprinkle evenly on top of the casserole for a crunchy topping.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, until the casserole is bubbly and the topping is golden brown.

                Serve: Remove from the oven and let it cool for a few minutes before serving. This dish can be served as a main or as a hearty side.
