Cheesy Beef and Spinach Stuffed Shells

20 jumbo pasta shells

1 lb ground beef

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 large egg

3 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

Salt and pepper, to taste

3 cups marinara sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool.

    Prepare the Filling: In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat, then add minced garlic and cook for an additional minute until fragrant. Stir in the chopped spinach and cook until just wilted.

      Mix the Cheese Mixture: In a large bowl, combine ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, oregano, basil, salt, and pepper. Add the cooked beef and spinach mixture to the cheese mixture and stir until well combined.

        Stuff the Shells: Preheat your oven to 375°F (190°C). Take each jumbo shell and carefully spoon the cheesy beef and spinach filling inside, packing it gently.

          Assemble the Dish: Spread 1 cup of marinara sauce in the bottom of a baking dish. Place the stuffed shells seam-side up in the dish. Pour the remaining marinara sauce over the filled shells, ensuring they are well coated.
