1 lb ground beef

1 cup quinoa, rinsed

2 cups beef broth

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 medium onion, chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and garlic; sauté until the onion is translucent.

      Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Season with smoked paprika, Italian seasoning, salt, and pepper.

        Stir in the diced tomatoes and frozen mixed vegetables. Allow to simmer for about 3-4 minutes.

          In a separate pot, bring the beef broth to a boil and add the rinsed quinoa. Reduce the heat to low, cover, and simmer until the quinoa is fluffy and has absorbed all the broth (about 15 minutes).

            Once the quinoa is cooked, combine it with the beef mixture. Stir in half of the cheddar and mozzarella cheese until well blended.

              Transfer the mixture into a greased 9x13 inch casserole dish. Sprinkle the remaining cheese on top.

                Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                  Remove from the oven, let it cool slightly, then garnish with fresh parsley before serving.
