Cheesy Beef and Quinoa Casserole

1 lb ground beef

1 cup quinoa, rinsed and drained

2 cups beef broth

1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes, drained

1 cup corn, frozen or canned

1 small onion, diced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheddar cheese (plus extra for topping)

½ cup sour cream

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it apart with a wooden spoon. Drain excess fat if necessary.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion is translucent.

        Combine Ingredients: Add the rinsed quinoa, beef broth, black beans, diced tomatoes, corn, chili powder, cumin, paprika, salt, and black pepper to the skillet. Stir well to combine.

          Simmer: Bring the mixture to a gentle boil. Once boiling, reduce the heat, cover, and let it simmer for 15-20 minutes, or until the quinoa is cooked and has absorbed most of the liquid.

            Mix in Cheese and Sour Cream: Remove the skillet from heat and stir in the shredded cheddar cheese and sour cream until melted and well combined.

              Transfer to Baking Dish: Pour the beef and quinoa mixture into a greased 9x13 inch (or similar size) baking dish, spreading it evenly. Top with additional shredded cheese.

                Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese on top is bubbly and golden.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro or parsley if desired, then serve warm.
