Cheesy Beef and Broccoli Rice Bowl

1 lb (450g) ground beef

2 cups broccoli florets (fresh or frozen)

1 cup jasmine or basmati rice

2 cups beef broth (or water)

1 cup cheddar cheese, shredded

1 tablespoon soy sauce

1 tablespoon garlic powder

1 tablespoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

Optional: sliced green onions for garnish

Instructions
 

Cook the Rice: In a medium saucepan, combine rice and beef broth (or water) and bring to a boil. Reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess grease if necessary.

      Add Broccoli: Stir in the broccoli florets with the browned beef. Cover the skillet and let it cook for about 5 minutes (for fresh broccoli) or until the broccoli is tender and bright green (for frozen broccoli, just until warmed through).

        Season the Mixture: Add soy sauce, garlic powder, onion powder, salt, and pepper to the skillet. Mix well and let it cook for another 2-3 minutes for the flavors to meld.

          Combine with Rice: Add the cooked rice to the beef and broccoli mixture in the skillet. Stir gently to combine everything evenly.

            Melt the Cheese: Sprinkle the shredded cheddar cheese on top of the rice bowl. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes.

              Serve: Once the cheese is melted, remove from heat. Scoop generous portions into bowls and garnish with sliced green onions if desired.
