1 cup quinoa, rinsed and drained

2 cups beef broth or water

1 pound ground beef (or turkey)

2 cups broccoli florets, fresh or frozen

1 small onion, diced

3 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup milk (or plant-based milk)

2 large eggs

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

Cooking oil for sautéing

Extra cheese for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Quinoa: In a medium saucepan, combine quinoa and beef broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed and the quinoa is fluffy. Set aside.

      Sauté the Beef: In a large skillet, heat a drizzle of cooking oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and ground beef, cooking until the beef is browned and cooked through. Drain excess fat if needed.

        Add Broccoli: Stir in the broccoli florets and cook for an additional 3-4 minutes until they are bright green and slightly tender. Remove from heat.

          Mix Everything Together: In a large mixing bowl, combine the cooked quinoa, sautéed beef and broccoli mixture, shredded cheddar cheese, milk, eggs, Italian seasoning, salt, black pepper, and red pepper flakes. Mix until all ingredients are well incorporated.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading evenly. If you like extra cheesy goodness, sprinkle additional cheddar cheese on top.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, until the top is golden brown and the mixture is set.

                Serve: Remove from the oven, let it cool for a few minutes, then slice and serve warm.
