Cheesy Beef and Black Bean Enchiladas

1 pound ground beef

1 can (15 oz) black beans, rinsed and drained

1 small onion, diced

2 cloves garlic, minced

1 tablespoon taco seasoning

1 cup corn (fresh or frozen)

1 cup shredded cheddar cheese, divided

1 cup shredded Monterey Jack cheese

8 small flour tortillas

2 cups enchilada sauce (homemade or store-bought)

1/2 cup sour cream (for topping)

2 tablespoons chopped fresh cilantro (for garnish)

Salt and pepper to taste

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.

      Add Vegetables: Add the diced onion and minced garlic to the skillet with the beef. Sauté for about 3-4 minutes until the onion is translucent.

        Season the Mix: Stir in the taco seasoning, black beans, and corn. Mix well and let it cook for an additional 2-3 minutes. Season with salt and pepper to taste.

          Prepare Tortillas: In a separate pan, warm the flour tortillas over low heat for about 30 seconds on each side to make them pliable.

            Assemble Enchiladas: Take a warm tortilla, spoon about 1/4 cup of the beef mixture into the center, sprinkle with a little cheddar cheese, and roll it up tightly. Place seam side down in a greased 9x13 inch baking dish. Repeat with remaining tortillas and filling.

              Add Sauce: Once all enchiladas are in the dish, pour the enchilada sauce evenly over the top. Sprinkle the Monterey Jack cheese and the remaining cheddar cheese over the sauce.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Serve: Once done, let them cool for a few minutes. Serve topped with sour cream and garnish with fresh cilantro.
