For the crust:

1 ½ cups chocolate wafer cookies, crushed

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake filling:

3 (8-ounce) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

½ cup sour cream

1 cup Godiva chocolate liqueur

6 ounces semi-sweet Godiva chocolate, melted and slightly cooled

For the chocolate ganache topping:

1 cup heavy cream

8 ounces semi-sweet chocolate, chopped

1 tablespoon unsalted butter

For garnishing:

Whipped cream

Chocolate shavings or curls

Whole chocolate-covered strawberries (optional)

Instructions
 

Prepare the crust:

    - Preheat the oven to 350°F (175°C).

      - In a medium bowl, combine crushed chocolate wafer cookies, melted butter, and granulated sugar. Mix until the mixture resembles wet sand.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let it cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese on medium speed until creamy and smooth.

              - Gradually add granulated sugar and vanilla extract, continuing to beat until well combined.

                - Add the eggs one at a time, mixing on low speed after each addition until just incorporated.

                  - Mix in sour cream, Godiva chocolate liqueur, and melted Godiva chocolate until the mixture is smooth and uniform.

                    Assemble the cheesecake:

                      - Pour the cheesecake filling over the cooled crust in the springform pan. Spread evenly.

                        - Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center has a slight jiggle.

                          - Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight until fully chilled.

                            Prepare the chocolate ganache:

                              - In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not boil.

                                - Remove from heat and add the chopped semi-sweet chocolate and unsalted butter. Stir until the chocolate is fully melted and the mixture is smooth.

                                  - Allow the ganache to cool slightly before pouring it over the chilled cheesecake.

                                    Finalize and serve:

                                      - Carefully release the cheesecake from the springform pan. Pour the cooled ganache over the top, spreading gently with a spatula.

                                        - Garnish with whipped cream, chocolate shavings, or chocolate-covered strawberries if desired.
