4 slices of thick-cut sourdough bread

4 large eggs

1 cup sharp cheddar cheese, grated

1 small can (4 oz) diced green chilies, drained

1 avocado, sliced

2 tablespoons butter

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Hot sauce for serving (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) while you prepare the ingredients.

    Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, smoked paprika, garlic powder, salt, and pepper. Stir in the diced green chilies.

      Cook the Eggs: In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and cook gently, stirring occasionally until the eggs are just set but still slightly creamy. Remove from heat.

        Toast the Bread: In another skillet or on a griddle, melt the remaining tablespoon of butter. Once hot, add the slices of sourdough and toast them until golden brown on both sides. Remove from heat and place them on a baking sheet.
