4 cups fresh broccoli florets (about 2 medium heads)

1 medium onion, diced

2 garlic cloves, minced

4 cups vegetable or chicken broth

2 medium potatoes, peeled and diced (about 2 cups)

1 carrot, diced

1 teaspoon dried thyme

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon black pepper

2 cups sharp cheddar cheese, shredded

1 cup heavy cream or half-and-half

Salt to taste

Optional: Croutons for topping

Prep the Vegetables: Rinse and chop the broccoli into florets. Dice the onion, garlic, potatoes, and carrot into small pieces.

    Combine Ingredients: In the crockpot, combine the broccoli florets, diced onion, minced garlic, diced potatoes, diced carrot, vegetable or chicken broth, dried thyme, onion powder, garlic powder, and black pepper. Stir well to combine.

      Cook: Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until the vegetables are tender.

        Blend (Optional): If you prefer a creamier soup, use an immersion blender to puree the soup until smooth (or transfer in batches to a regular blender and blend carefully).

          Add Cheese and Cream: Once the soup is blended to your desired consistency, stir in the shredded cheddar cheese and heavy cream. Cook for an additional 15-30 minutes on low until the cheese is melted and the soup is warmed through. If the soup is too thick, add additional broth or water to reach your desired consistency.

            Season: Taste the soup and add salt if needed. Adjust the seasoning to your preference.
