Charcuterie Fried Rice

2 cups day-old jasmine rice

1 cup assorted charcuterie meats (salami, prosciutto, chorizo), diced

1/2 cup aged cheddar cheese, shredded

1/4 cup black olives, sliced

1/4 cup green onions, chopped

2 large eggs, lightly beaten

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt & pepper, to taste

Fresh parsley or basil, for garnish

Instructions
 

Prepare the Ingredients: Begin by dicing your assorted charcuterie meats and shredding the cheddar cheese. Have all ingredients ready to go, as stir-fried rice comes together quickly.

    Heat the Oil: In a large skillet or wok, heat olive oil over medium-high heat until shimmering.

      Cook the Eggs: Add the beaten eggs to the skillet, scrambling them until just set. Remove the cooked eggs from the pan and set aside.

        Sauté the Aromatics: In the same skillet, add minced garlic and sauté for about 30 seconds, until fragrant. Be careful not to let it burn.

          Fry the Meats: Add the diced charcuterie meats to the skillet, and sauté for about 3-4 minutes until they begin to crisp up slightly.

            Add the Rice: Incorporate the day-old jasmine rice, breaking up any clumps with a spatula. Fry the rice for about 5-7 minutes, stirring frequently to allow it to heat through and absorb the flavors.

              Mix in Flavorings: Pour in the soy sauce and sprinkle the smoked paprika over the rice. Stir well to ensure all ingredients are evenly mixed. Season with salt and pepper to taste.
