1 lb boneless skinless chicken thighs, cut into bite-sized pieces

2 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

¼ cup red wine (optional)

1 cup cherry tomatoes, halved

½ cup Kalamata olives, pitted and halved

½ cup assorted cheese (e.g., brie, gouda, cheddar), cubed or sliced

1 cup arugula or spinach

¼ cup walnuts or pecans, chopped

Fresh herbs for garnish (e.g., rosemary, thyme, or basil)

Balsamic glaze for drizzling (optional)

Instructions
 

Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with garlic powder, smoked paprika, salt, and black pepper. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Stir occasionally to ensure even cooking.

    Add Wine: If using, pour in the red wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate and the flavors to meld. Scrape up any flavorful bits stuck to the bottom of the skillet.
