Ingredients

2 medium zucchinis, grated

2 large carrots, grated

1 cup all-purpose flour (or gluten-free flour)

1 egg, lightly beaten

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika (optional)

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried parsley)

1 tablespoon olive oil, for frying

Whole wheat or spinach wraps (4 large ones)

Hummus or tzatziki, for spreading

Lettuce or spinach leaves, for fillings

Cherry tomatoes, halved, for garnish (optional)

Instructions

Prepare the Vegetables:

    - Start by grating the zucchinis and carrots using a box grater or food processor. Place them in a clean kitchen towel and squeeze out excess moisture to prevent soggy fritters.

      Mix the Batter:

        - In a large mixing bowl, combine the grated zucchinis, grated carrots, flour, beaten egg, Parmesan cheese, salt, pepper, garlic powder, onion powder, smoked paprika, and parsley. Mix until fully combined, ensuring the vegetables are evenly coated.

          Heat the Pan:

            - Heat olive oil in a large skillet over medium heat. You can test if the oil is ready by dropping a small bit of batter into the pan; it should sizzle upon contact.

              Fry the Fritters:

                - Once the oil is hot, drop spoonfuls (about 2 tablespoons each) of the batter into the skillet, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side or until golden brown and crispy. Repeat with the remaining batter, adding more oil as necessary.

                  Assemble the Wraps:

                    - Once the fritters are cooked, let them drain on a paper towel to remove excess oil. Take the wraps and spread a generous amount of hummus or tzatziki. Layer with fresh lettuce or spinach leaves, and carefully place 2-3 fritters on top.

                      Garnish and Serve:

                        - Optionally, sprinkle with halved cherry tomatoes for extra freshness. Wrap tightly, cut in half if desired, and serve immediately, either warm or at room temperature.
