1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup grated carrots (about 2 medium carrots)

1/2 cup rolled oats

1/2 cup walnuts, chopped (optional)

1/4 cup raisins or cranberries (optional)

1/2 cup cream cheese frosting (for drizzling, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined. Set aside.

      Cream the Butters and Sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy using an electric mixer (about 2-3 minutes).

        Incorporate Wet Ingredients: Beat in the egg and vanilla extract until well mixed.

          Add Carrots and Oats: Stir in the grated carrots and rolled oats until evenly distributed throughout the batter.

            Combine with Dry Ingredients: Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to over-mix. If desired, fold in the chopped walnuts and raisins/cranberries.
