1 cup rolled oats

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup unsweetened applesauce

1/4 cup maple syrup or honey

1/2 cup grated carrot (about 1 medium carrot)

1/4 cup crushed walnuts (optional)

1/4 cup raisins or dried cranberries

1 teaspoon vanilla extract

1/4 cup Greek yogurt (for an optional creamy topping)

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (180°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the applesauce, maple syrup (or honey), grated carrot, walnuts, raisins (or cranberries), and vanilla extract until combined.

        Combine Mixtures: Gradually add the wet mixture to the dry mixture, stirring until everything is well incorporated. The mixture should be thick but sticky.

          Shape Cookies: Using a tablespoon or a cookie scoop, drop heaping tablespoons of dough onto the prepared baking sheet. Flatten each cookie slightly using your fingers or the back of the spoon, as they won’t spread much during baking.

            Bake: Place the baking sheet in the oven and bake for 12-15 minutes, or until the cookies are lightly golden around the edges.

              Cool: Once done, remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
