Caramelized Onion Pasta with Chilli Oil

400g spaghetti or fettuccine

2 large onions, thinly sliced

4 tablespoons olive oil, divided

3 cloves garlic, minced

1 teaspoon sugar

Salt and pepper to taste

1 teaspoon dried oregano

1 teaspoon crushed red pepper flakes (adjust for spice preference)

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Zest of 1 lemon

Optional: 1/4 cup toasted pine nuts for crunch

Instructions
 

Caramelize the Onions: In a large skillet, heat 2 tablespoons of olive oil over medium-low heat. Add the sliced onions and sprinkle with a pinch of salt. Cook gently, stirring occasionally until the onions become soft and golden brown, about 20-25 minutes. If the onions start to stick, add a splash of water to the pan to deglaze and continue cooking until caramelized. Stir in the sugar during the last 5 minutes of cooking.

    Prepare the Pasta: Meanwhile, in a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water before draining the pasta.

      Infuse the Oil: In a small saucepan over low heat, combine the remaining 2 tablespoons of olive oil with minced garlic and crushed red pepper flakes. Allow it to gently simmer for about 5 minutes, being careful not to burn the garlic. Remove from heat and let it sit to infuse the flavors.

        Combine Pasta and Onions: Add the drained pasta to the skillet with the caramelized onions. Pour in the infused chili oil and a splash of reserved pasta water (start with 1/4 cup and add more if necessary). Toss everything together until the pasta is well coated. Season with dried oregano, salt, and pepper to taste.

          Finish the Dish: Stir in the grated Parmesan cheese and lemon zest for a fresh note. If the pasta looks dry, add more reserved pasta water until desired consistency is reached.

            Serve: Divide the pasta among serving plates. Garnish with fresh basil leaves and, if desired, sprinkle toasted pine nuts on top for texture.
