Caramelized Onion and Goat Cheese Tart

1 sheet of puff pastry (thawed if frozen)

3 large onions (yellow or white), thinly sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon sugar

Salt and pepper to taste

4 oz goat cheese, crumbled

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 egg (beaten, for egg wash)

Balsamic glaze (for drizzling, optional)

Instructions
 

Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). On a lightly floured surface, roll out the puff pastry to fit a tart pan (around 9 inches). Press it into the pan and trim the edges. Prick the bottom with a fork and place it in the fridge to chill while you prepare the filling.

    Caramelize the Onions: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions, and sprinkle with sugar, salt, and pepper. Cook the onions for about 30-40 minutes, stirring occasionally, until they are deeply caramelized and golden brown. If the onions start to stick, add a touch of water to deglaze the pan.

      Add Thyme: Once the onions are caramelized, stir in the fresh thyme leaves and cook for an additional minute. Remove from heat and let cool slightly.

        Assemble the Tart: Remove the tart shell from the fridge. Spread the caramelized onion mixture evenly over the puff pastry. Sprinkle the crumbled goat cheese generously on top.

          Egg Wash: Brush the edges of the puff pastry with the beaten egg to give it a beautiful golden color when baked.

            Bake: Place the tart in the preheated oven and bake for 20-25 minutes, until the pastry is golden and puffed, and the cheese is slightly melted.

              Serve: Remove the tart from the oven and let it cool for a few minutes. Drizzle with balsamic glaze if desired before slicing. Serve warm or at room temperature as a delicious appetizer or light meal.
