Pizza Dough:

2 ¼ tsp active dry yeast (1 packet)

1 cup warm water (110°F)

2 ½ cups all-purpose flour

1 tsp salt

1 tbsp olive oil

Toppings:

2 large apples (such as Granny Smith or Honeycrisp), cored and thinly sliced

2 large onions, thinly sliced

3 tbsp unsalted butter

2 tbsp brown sugar

1 tsp dried thyme (optional)

½ cup crumbled goat cheese (or fresh mozzarella)

½ cup shredded fontina cheese

1 tbsp balsamic vinegar

Fresh arugula or spinach for garnish

Salt and pepper to taste

Instructions
 

Prepare the Pizza Dough:

    - In a small bowl, mix the warm water with active dry yeast and let it sit for about 5-10 minutes until frothy.

      - In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture along with the olive oil.

        - Mix until a dough forms, then knead on a lightly floured surface for 5-7 minutes until smooth.

          - Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

            Caramelize the Onions:

              - In a large skillet over medium heat, melt the butter. Add the sliced onions, salt, and pepper. Cook, stirring occasionally for about 10 minutes until they turn soft and translucent.

                - Sprinkle the brown sugar over the onions and continue to cook for an additional 15-20 minutes, stirring regularly, until they become deep golden brown and caramelized. Set aside.

                  Sauté the Apples:

                    - In the same skillet, add a bit more butter if necessary. Add the apple slices and cook over medium heat for about 5-7 minutes until they start to soften.

                      - Stir in the balsamic vinegar and add dried thyme if using. Cook for an additional 2-3 minutes, then remove from heat.

                        Assemble the Pizza:

                          - Preheat the oven to 475°F (245°C), and if using, place a pizza stone in the oven to heat.

                            - Once the dough has risen, punch it down and roll it out on a lightly floured surface into your desired shape and thickness (about 12 inches in diameter works well).

                              - Place the rolled dough on a pizza peel or a parchment-lined baking tray.

                                  Bake the Pizza:
