Ingredients

1 cup uncooked small pasta (like orzo or ditalini)

1 large apple, peeled and diced

1 cup brown sugar

1/2 cup unsalted butter

1/2 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup rolled oats

1/2 cup all-purpose flour

1/2 teaspoon baking soda

1/4 cup chopped walnuts (optional)

1 cup caramel sauce (store-bought or homemade)

Whipped cream for serving (optional)

Instructions

Cook the Pasta: Begin by boiling a pot of water. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

Prepare the Apple Mixture: In a skillet over medium heat, melt the butter. Add the diced apple, brown sugar, cinnamon, and salt. Stir to combine and cook until the apples are soft, about 5-7 minutes. Remove from heat and let cool slightly.

Make the Cookie Dough: In a large mixing bowl, combine the oats, flour, and baking soda. Stir in the apple mixture once cooled, followed by vanilla extract. Mix well until all ingredients are combined. Add walnuts if using, and then gently fold in the cooked pasta.

Form Cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Using a tablespoon, scoop portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are golden. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Add Caramel: Once the cookies are cooled, drizzle warm caramel sauce over them generously. Allow the caramel to set slightly before serving.

Serve: Serve the cookies warm or at room temperature, paired with a dollop of whipped cream if desired.
