Caprese Skewers with Balsamic Glaze

Ingredients
  

1 pint cherry tomatoes

8 oz fresh mozzarella balls (bocconcini)

Fresh basil leaves (about 1 bunch)

Salt and pepper, to taste

1 cup balsamic vinegar

2 tablespoons honey (optional)

Extra virgin olive oil, for drizzling

Skewers (6-inch or 8-inch)

Instructions
 

Prepare the Balsamic Glaze:

    - In a small saucepan, combine the balsamic vinegar and honey (if using) over medium heat.

      - Bring it to a gentle simmer and reduce the heat to low.

        - Let it simmer for about 10-15 minutes, or until it thickens slightly and coats the back of a spoon.

          - Remove from heat and allow to cool.

            Assemble the Skewers:

              - On each skewer, start by sliding on a cherry tomato.

                - Follow with a basil leaf, then a mozzarella ball.

                  - Repeat the process until the skewer is filled, leaving a little space at the ends.

                    - Finish with another cherry tomato and a basil leaf for a beautiful presentation.

                      Season the Skewers:

                        - Once assembled, drizzle the skewers lightly with extra virgin olive oil.

                          - Sprinkle them with salt and pepper to taste.

                            Serve:

                              - Arrange the skewers on a serving platter and finish by drizzling the cooled balsamic glaze over the top.

                                - Optionally, serve with extra balsamic glaze on the side for dipping.
