4 boneless, skinless chicken breasts

Salt and black pepper to taste

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

8 oz fresh mozzarella cheese, sliced

2 large tomatoes, sliced

1 cup fresh basil leaves

1/2 cup balsamic vinegar

2 tablespoons honey

Optional: Cracked black pepper and fresh basil for garnish

Instructions
 

Prepare the Chicken: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt, pepper, and dried Italian herbs on both sides.

    Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and sear for 4-5 minutes on each side until golden brown.

      Add Garlic: Reduce the heat to medium-low and add minced garlic to the skillet. Sauté for an additional 30 seconds until fragrant.

        Layer the Toppings: Arrange the sliced tomatoes and mozzarella evenly over the chicken breasts. Place the skillet in the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the cheese is bubbly.

          Make the Balsamic Glaze: While the chicken is baking, combine balsamic vinegar and honey in a small saucepan over medium heat. Bring to a simmer and reduce the heat to low. Stir occasionally until the mixture thickens and coats the back of a spoon, about 10-15 minutes. Remove from heat and let it cool slightly.

            Serve: Once the chicken is done, remove it from the oven. Drizzle the balsamic glaze over the chicken and garnish with fresh basil leaves and cracked black pepper if desired.
