Cabbage and Smoked Sausage Recipe

1 medium head of green cabbage, chopped

14 oz smoked sausage (such as kielbasa or andouille), sliced

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (adjust for spice preference)

Salt and black pepper to taste

1 cup chicken or vegetable broth

2-3 green onions, sliced (for garnish)

Optional: 1 tablespoon apple cider vinegar for a tangy kick

Instructions
 

Sauté the Sausage: In a large, heavy skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove sausage from the skillet and set aside, leaving the drippings in the pan.

    Cook Onions and Garlic: In the same skillet, add the diced onion and sauté for about 3 minutes until softened. Stir in the minced garlic and continue to cook for another 1-2 minutes until fragrant.

      Add the Cabbage: Gradually add the chopped cabbage to the skillet, stirring to combine. The cabbage will reduce in volume as it cooks.

        Seasoning: Sprinkle in the smoked paprika, red pepper flakes, salt, and black pepper. Mix well to coat the cabbage with the seasonings.

          Broth Addition: Pour in the chicken or vegetable broth, stirring to combine. Bring to a simmer, then reduce heat to low, cover, and let it cook for about 15-20 minutes until the cabbage is tender.

            Combine & Finish: Return the browned sausage to the skillet and mix it into the cabbage. If desired, stir in the apple cider vinegar for extra flavor. Cover and let simmer for another 5 minutes to heat through.

              Garnish & Serve: Remove from heat and sprinkle sliced green onions on top before serving. Enjoy this satisfying dish warm as a main course or side!
