Ingredients

2 cups pumpkin puree (cooked and cooled)

2 ½ cups all-purpose flour (plus extra for dusting)

1 large egg

1 teaspoon salt

½ teaspoon nutmeg

½ teaspoon black pepper

6 tablespoons unsalted butter

10 fresh sage leaves

Grated Parmesan cheese (for serving)

Optional: A sprinkle of crushed red pepper flakes

Instructions

Prepare the Gnocchi Dough: In a mixing bowl, combine the pumpkin puree, egg, salt, nutmeg, and black pepper. Mix well until smooth. Gradually add 2 cups of flour, stirring until a dough forms. Add more flour as needed, but the dough should be soft and slightly sticky.

Shape the Gnocchi: Lightly flour your work surface. Divide the dough into 4 equal parts. Roll each part into a long rope about ½ inch thick. Cut into 1-inch pieces. To shape the gnocchi, you can press each piece gently with a fork or your thumb to create a slight indentation.

Cook the Gnocchi: Bring a large pot of salted water to a boil. Drop the gnocchi in batches into the boiling water. Cook for 2-3 minutes, or until they float to the surface. Remove them with a slotted spoon and set them aside.

Make the Sage Butter Sauce: In a large skillet, melt the butter over medium heat. Add the fresh sage leaves and cook for about 2-3 minutes until the butter starts to brown and the sage becomes crispy.

Combine Gnocchi with Sauce: Carefully add the cooked gnocchi to the skillet with the butter and sage. Toss gently to coat the gnocchi in the buttery sauce, cooking for an additional 2-3 minutes until heated through.

Serve: Plate the gnocchi, and sprinkle with grated Parmesan cheese. For an extra kick, add a pinch of crushed red pepper flakes if desired. Enjoy your delightful Buttery Sage Pumpkin Gnocchi!
