1 cup canned pumpkin puree

1/2 cup unsalted butter, melted and slightly cooled

3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with muffin liners or spray with non-stick cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the canned pumpkin puree, melted butter, brown sugar, and granulated sugar. Whisk until well combined. Add the eggs one at a time, whisking after each addition, followed by the vanilla extract. Set aside.

      Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.
