4 cups fresh peaches, peeled and sliced (about 6-7 medium peaches)

1/2 cup brown sugar, packed

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

For the Crisp Topping:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup cold unsalted butter, cubed

1/2 cup chopped nuts (such as pecans or walnuts) - optional

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the Peach Filling: In a large mixing bowl, combine the sliced peaches, brown sugar, lemon juice, vanilla extract, cinnamon, and salt. Gently toss to combine, ensuring the peaches are evenly coated. Set aside to marinate for about 10-15 minutes.

      Make the Crisp Topping: In another bowl, mix the rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold cubed butter to the mixture. Using a pastry cutter or your fingers, cut the butter into the dry ingredients until the mixture resembles coarse crumbs. If you're including nuts, fold them in gently.

        Assemble the Crisp: Grease a 9x13 inch baking dish. Pour the peach mixture into the dish, spreading it evenly. Sprinkle the crisp topping over the peaches, covering them completely.
