Butter Pecan Cookies

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pecans, toasted and coarsely chopped

1/2 cup white chocolate chips (optional)

Flaky sea salt, for sprinkling

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 3-4 minutes.

      Add Egg and Vanilla: Beat in the egg and vanilla extract, mixing until fully combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry mixture to the wet ingredients, stirring just until flour is incorporated. Be careful not to overmix.

            Fold in Pecans and Optional Chocolate: Gently fold in the toasted pecans and white chocolate chips (if using) until evenly distributed throughout the dough.

              Scoop and Shape Cookies: Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart. Press each cookie lightly to flatten them slightly.

                Sprinkle with Sea Salt: Just before baking, sprinkle a tiny pinch of flaky sea salt on top of each cookie for an extra flavor kick.

                  Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set. They will continue to firm up as they cool.

                    Cool & Store: Allow cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely. Store in an airtight container at room temperature.
