8 oz rotini or fusilli pasta

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cup celery, diced

1/2 cup red onion, finely chopped

1/2 cup shredded carrots

1/2 cup blue cheese crumbles (optional)

1/2 cup buffalo sauce (adjust to taste)

1/4 cup olive oil

2 tbsp apple cider vinegar

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini or fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Chickpeas: In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, celery, red onion, and shredded carrots.

      Make the Dressing: In a separate bowl, whisk together the buffalo sauce, olive oil, apple cider vinegar, garlic powder, and smoked paprika. Season with salt and pepper to taste.

        Combine Ingredients: Add the cooled pasta to the chickpea mixture. Pour the dressing over the pasta and vegetables, and toss everything together until thoroughly combined.

          Add Cheese: Gently fold in the blue cheese crumbles if using, reserving a few for garnish.

            Taste and Adjust: Taste the salad and adjust seasoning or buffalo sauce as needed for desired heat.

              Chill: Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

                Serve: Before serving, toss the salad again and garnish with fresh parsley and extra blue cheese crumbles on top.
