Ingredients

1 cup all-purpose flour

2 tablespoons brown sugar (packed)

1 tablespoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 large egg

1 cup milk (whole or buttermilk for extra richness)

2 tablespoons unsalted butter (melted) + extra for cooking

1 teaspoon vanilla extract

Instructions

Mix the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, brown sugar, baking powder, ground cinnamon, and salt until well combined.

Combine the Wet Ingredients: In another bowl, beat the egg, and then add in the milk, melted butter, and vanilla extract. Whisk until smooth.

Combine Wet and Dry Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined - be careful not to overmix; a few lumps are perfectly fine!

Preheat the Griddle: Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter to coat the surface, ensuring it’s hot but not smoking.

Cook the Pancakes: Use a 1/4 cup measuring cup to pour batter onto the griddle. Cook until bubbles form on the surface and the edges begin to look set, about 2-3 minutes.

Flip and Finish Cooking: Carefully flip the pancake and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter, adding more butter to the skillet as needed.

Serve: Stack the pancakes on plates and drizzle with warm maple syrup. For an extra touch, sprinkle a pinch of cinnamon and a dusting of powdered sugar on top.

Enjoy: Serve immediately, and enjoy the delicious warm, buttery, cinnamon-sweet breakfast!
